Summer, Anyone?

Since my parents are basking in the sun of Cancun and everyone else is in Florida for mid-winter break, it got me thinking tropcial. I wanted to post a recipe that could warm us all up a bit. ENJOY!!

PAPAYA SALSA
2-3 Chicken breasts
1/4 cup soy sauce
1 1/2 tsp. olive oil
1 1/2 chili powder
1 1/2 cumin
1 1/2 ground coriander
3-4 garlic cloves. minced
1 1/2 tsp. honey
Juice from 2 limes
Grill chicken then chop into pieces. While chicken is grilling,combine the rest of the ingredients on medium-hot stove. Stir in the chicken; heat through till chicken; heat through. Let chicken absorb marinade.
1/2-1 large papaya, cubed (or 2-3 small)
1/2-1 Red/Green Bell Pepper, chopped ( to taste)
1/4-1/2 cup fresh cilantro (less if dried)
1/4-1/2 red onion, chopped
2 Tbsp. fresh lime juice
1-2 avocados, sliced
Combine the chicken mixture with papaya mixture in a pretty bowl. Serve as a dip with good corn chips. You could also make this a meal by using it as a filling in totillas.

Sounds lovely. I've never seen a papaya at our small town stores here, or I would have to try it. I'll have to keep an eye out. Sorry you couldn't be basking in the sun too ;)
